  • 2 tbsp taco seasoning
  • 28 oz petite diced tomatoes (with juices)
  • 2 cups sweet corn (frozen or canned)
  • 2 cups chicken broth
  • 1 cup salsa verde
  • 8 oz cream cheese

Instructions

  1. Slow Cooker Method: Place all ingredients in the slow cooker. Cook on low for 6 hours or high for about 4 hours. Shred the chicken, whisk in cream cheese until smooth, and serve topped with your choice of garnishes.
  2. Instant Pot Method: Add chicken, taco seasoning, tomatoes (with juices), corn, broth, and salsa verde to the Instant Pot. Set to manual high pressure for 10 minutes. After a natural release for 15 minutes, shred the chicken, stir in cream cheese until blended, and return the chicken before serving.
