Ingredients

Scale

For the Cookies:
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon instant espresso powder
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup brewed espresso or strong coffee
1 cup semi-sweet chocolate chips

1/2 cup powdered sugar

Optional Mascarpone Glaze:
4 ounces mascarpone cheese
1 cup powdered sugar
1 to 2 tablespoons milk
1/2 teaspoon vanilla extract

Instructions

  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and espresso powder.
  • In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and brewed espresso.
  • Gradually add the dry ingredients to the wet ingredients and mix until combined.
  • Fold in the chocolate chips until evenly distributed.
  • Cover the dough and refrigerate for at least 1 hour to make it easier to handle.
  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Scoop the dough into small balls and roll generously in powdered sugar.
  • Place the dough balls on the prepared baking sheets, leaving space between each cookie.
  • Bake for 10 to 12 minutes, or until the cookies are puffed and crackled on top.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • If using the mascarpone glaze, whisk together the mascarpone cheese, powdered sugar, milk, and vanilla until smooth. Drizzle lightly over the cooled cookies.
  • Serve with coffee or dust lightly with cocoa powder for an extra tiramisu-inspired touch.
