  • 6 hard-boiled eggs
  • 8 ounces small pasta (like ditalini or elbow macaroni)
  • 3/4 cup mayonnaise
  • 1 1/2 tablespoons dijon mustard
  • 1 teaspoon white vinegar or lemon juice
  • 1 clove garlic, minced
  • Salt and spices (smoked paprika and cayenne pepper)
  • Diced red onion and sliced green onions for crunch

Instructions

  1. Cook pasta in boiling salted water until al dente. Drain and cool.
  2. Peel and chop hard-boiled eggs into small pieces; set aside.
  3. In a bowl, whisk together mayonnaise, dijon mustard, vinegar or lemon juice, minced garlic, salt, smoked paprika, and cayenne pepper until smooth.
  4. Combine cooled pasta with chopped eggs in a mixing bowl. Fold in the dressing along with diced red onion and green onions.
  5. Cover and refrigerate for at least 15 minutes before serving to allow flavors to meld.
