  • 1 head cauliflower (rinsed, core and bottom leaves removed)
  • 2 tablespoons water
  • 1/2 cup mayonnaise
  • 1 teaspoon finely chopped onion
  • 1 teaspoon mustard
  • 3 slices American cheese (or 1/2 cup grated cheddar)

Instructions

  1. Place the whole cauliflower in a microwavable casserole dish and add 2 tablespoons of water. Cover securely.
  2. Microwave on high for 8-9 minutes until tender-crisp. If needed, continue microwaving in short intervals.
  3. In a mixing bowl, combine mayonnaise, chopped onion, and mustard to make the sauce.
  4. Once cooked, carefully remove the cauliflower and spoon the mustard sauce over it, spreading evenly.
  5. Layer the cheese on top and microwave again for another 1-2 minutes until melted.
  6. Let it stand for two minutes before serving.
