  • 1 head cauliflower (rinsed, core and bottom leaves removed)
  • 2 tablespoons water
  • 1/2 cup mayonnaise
  • 1 teaspoon onion (finely chopped)
  • 1 teaspoon mustard
  • 3 slices American cheese or 1/2 cup grated cheddar cheese

Instructions

  1. Place the rinsed cauliflower in a microwavable casserole dish with 2 tablespoons of water. Cover with a lid.
  2. Microwave on high for 8-9 minutes until tender-crisp; check with a fork and add more time if needed.
  3. In a mixing bowl, combine mayonnaise, onion, and mustard; mix until smooth.
  4. Spoon the sauce over the cooked cauliflower and spread evenly.
  5. Top with cheese slices before microwaving again for an additional 1-2 minutes until melted.
  6. Let stand for two minutes before serving.
