  • 3 cups baby spinach (chopped)
  • 1 lb. strawberries (sliced)
  • 3/4 cup raspberry vinegar (or cider)
  • 3 tablespoons honey
  • 3 teaspoons extra virgin olive oil
  • 3 teaspoons cornstarch
  • 1½ teaspoons salt
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon mustard powder
  • 3 teaspoons poppy seeds

Instructions

  1. Cook the pasta in a large pot of boiling water according to package directions until al dente. Drain and let cool.
  2. For the dressing, combine raspberry vinegar, honey, olive oil, cornstarch, salt, onion powder, mustard powder, and poppy seeds in a small saucepan. Bring to a gentle boil while whisking until thickened. Remove from heat and allow cooling.
  3. In a large mixing bowl, combine cooled pasta with chopped spinach and sliced strawberries. Pour the cooled dressing over the salad and toss gently until well combined.
