Indulge in the delightful flavors of Southern macaroni salad, a classic dish that perfectly balances creamy and tangy notes. Ideal for summer gatherings, potlucks, or family barbecues, this salad brings a nostalgic touch to any meal. Featuring tender elbow macaroni, boiled eggs, and a medley of fresh vegetables, it’s an easy-to-make side that complements grilled meats beautifully or stands alone as a refreshing treat.

Ingredients

Scale
  • 8 oz elbow macaroni pasta (uncooked)
  • 3 eggs (boiled and sliced into chunks)
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1/2 cup chopped onions (I used red onions)
  • 2 celery stalks (chopped)
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in boiling water until al dente according to package instructions. Drain and rinse under cold water until completely cooled.
  2. In a large mixing bowl, combine the cooled pasta, boiled egg chunks, mayonnaise, mustard, chopped onions, celery, shredded cheese, garlic powder, salt, and pepper.
  3. Mix well until all ingredients are thoroughly combined.
  4. Cover and refrigerate for at least one hour before serving to enhance flavors.
