  • 1 tbsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 cup roasted and salted pistachios (finely chopped)
  • Flaky sea salt
  • 1 dark chocolate bar (chopped, approx. 3/4 cup)

Instructions

  1. Brown the butter in a medium pan over medium heat until golden brown and aromatic. Let it cool slightly.
  2. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  3. In a large bowl, whisk together cooled brown butter, light brown sugar, and white sugar until well combined.
  4. Add the egg and vanilla extract, whisking until smooth.
  5. Fold in flour, baking soda, and chopped pistachios until just combined; add chopped dark chocolate.
  6. Scoop dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 12–15 minutes until edges are golden but centers look puffy.
  8. Sprinkle with flaky sea salt immediately after removing from the oven and let cool on a wire rack.
