  • 1 sheet of puff pastry
  • 250 ml milk
  • 20 g cornstarch
  • 2 egg yolks
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • Fresh or frozen raspberries
  • 1 teaspoon butter

Instructions

  1. Preheat your oven to 190 degrees Celsius.
  2. In a saucepan, combine milk, cornstarch, egg yolks, sugar, and vanilla extract. Heat over medium while stirring until thickened.
  3. Remove from heat, stir in butter, and let it cool.
  4. Roll out the puff pastry on a floured surface and cut into eight rectangles.
  5. Place custard in the center of each rectangle and top with raspberries.
  6. Fold over the filling to seal each pastry.
  7. Brush with an egg wash (whisked egg yolk and milk).
  8. Bake for 15-20 minutes until golden brown.
  9. Allow to cool slightly before serving.
