  • 1 bag frozen vegan dumplings (12 to 15 pieces)
  • 1 tbsp minced garlic
  • 1 tbsp red Thai curry paste
  • 2 to 3 tsp chili oil
  • 1 tsp salt
  • 1 tsp sugar
  • 4 scallions
  • 1/2 cup chopped cremini mushrooms
  • 1 tbsp chopped cilantro (fresh)
  • 1 tbsp sliced scallion greens
  • 1 tbsp crunchy garlic

Instructions

  1. Prepare all ingredients by chopping scallions and mushrooms.
  2. Heat avocado oil in a large pot over medium heat, then sauté minced garlic until fragrant.
  3. Add chopped onions and mushrooms; cook until soft.
  4. Stir in red Thai curry paste, soy sauce, salt, and sugar; pour in vegetable broth and coconut milk. Bring to a gentle simmer.
  5. Add frozen vegan dumplings to the broth and cook according to package instructions (about 5–7 minutes).
