  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup fresh or canned pineapple chunks, drained
  • 1 bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup white or jasmine rice, rinsed
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons vegetable oil
  • 1/4 cup water or chicken broth

Instructions

  1. Prepare all ingredients: chop chicken, bell pepper, green onions; mince garlic; grate ginger; drain pineapple.
  2. In a large skillet over medium-high heat, heat 1 tablespoon of oil and cook chicken until golden brown, about 5 minutes. Remove from pan.
  3. Add remaining oil to the pan and sauté garlic, ginger, and bell pepper for 2-3 minutes until fragrant.
  4. Stir in rinsed rice and toast for about a minute. Add pineapple chunks and reserved juice.
  5. Return chicken to the pan and mix well with soy sauce, brown sugar/honey, and water/chicken broth. Cover and cook on medium heat for about 15 minutes until rice is tender.
  6. Fluff rice with a fork; garnish with chopped green onions if desired before serving hot.
