  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • 1 yellow onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 3 garlic cloves
  • 1 tablespoon fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 1/2 cups fresh pineapple
  • 1/2 cup frozen peas
  • Fresh lime juice and green onions for garnish

Instructions

  1. 1. Season chicken lightly with salt; let rest for 10–15 minutes.
  2. 2. Heat 2 tablespoons of coconut oil in a wok or skillet over medium heat.
  3. 3. Add chicken; cook for 5–7 minutes until browned and cooked through. Remove from pan.
  4. 4. In the same pan, add remaining coconut oil; sauté onion until translucent (3–4 minutes).
  5. 5. Add bell peppers, garlic, and ginger; cook for an additional 2–3 minutes.
  6. 6. Deglaze with soy sauce; stir in rice, honey, pineapple, and cooked chicken.
  7. 7. Toss well; reduce heat to low and cook for about 5 minutes.
  8. 8. Add peas and lime juice; stir gently before serving.
