- 3 boxes Berry Blue Jell-O mix (3 oz each)
- 4 envelopes unflavored vegan gelatin (1 oz each)
- 3 cups boiling water
- 4 envelopes unflavored vegan gelatin (1 oz each)
- 6 cups boiling water
- 8 ounces Cool Whip (thawed)
- 3 boxes Strawberry Jell-O mix (3 oz each)
- 2 cups boiling water
- Sprinkles (optional)
Instructions
- Prepare two 8'' x 8'' pans.
- For the blue layer: Mix Berry Blue Jell-O with vegan gelatin in a bowl. Pour in boiling water and stir until dissolved. Pour into one pan and refrigerate until set (about 4 hours).
- For the red layer: Repeat the same process with Strawberry Jell-O using 2 cups of boiling water in another pan. Refrigerate until set.
- Once both layers are set, cut them into small squares.
- Layer the squares alternately in parfait glasses with Cool Whip between each layer.
- Optional: Top with sprinkles before serving.
