  • 1/2 cup oil-packed sun-dried tomatoes, drained
  • 1 pound boneless chicken breasts or thighs, cubed
  • Salt and black pepper to taste
  • 4 teaspoons Italian seasoning
  • 2 tablespoons salted butter
  • 2 cloves garlic, chopped
  • 3/4 – 1 pound short cut pasta
  • 2 cups whole milk
  • 2 ounces cream cheese
  • 2 cups chopped baby spinach
  • 1/2 cup grated parmesan cheese
  • 1/2 cup fresh chopped basil

Instructions

  1. In a large pot over medium-high heat, combine the oil from the sun-dried tomatoes with cubed chicken and 2 teaspoons of Italian seasoning. Cook for about 5 minutes until the chicken is thoroughly cooked. Remove the chicken from the pot and set aside.
  2. In the same pot, add butter and garlic along with the remaining Italian seasoning. Sauté for about 2 minutes until fragrant.
  3. Stir in short cut pasta and add 2 cups of water. Cook for approximately 8 minutes, stirring frequently until al dente.
  4. Reduce heat and mix in whole milk, cream cheese, and parmesan cheese until well combined and creamy.
  5. Return cooked chicken to the pot along with spinach and sun-dried tomatoes; gently mix. Remove from heat and stir in fresh basil.
  6. Serve immediately with extra parmesan cheese on top.
