  • 1 pound boneless chicken breasts or thighs, cubed
  • 2 teaspoons Cajun seasoning
  • 1 yellow onion, sliced
  • 2 poblano peppers, chopped
  • 3 cloves garlic, minced
  • 1 pound short cut pasta
  • 2 cups milk
  • 2 ounces cream cheese
  • 1/2 cup ranch dressing
  • 1 cup grated parmesan cheese

Instructions

  1. In a large pot over medium-high heat, melt the butter. Add chicken and Cajun seasoning; cook for about 5 minutes until chicken is fully cooked. Set aside.
  2. Sauté onions, poblano peppers, garlic, and additional Cajun seasoning in the same pot until soft (4–5 minutes).
  3. Stir in pasta and 2 cups of water; cook until al dente (approximately 8 minutes).
  4. Mix in milk, cream cheese, ranch dressing, and parmesan cheese; stir until creamy.
  5. Return chicken to the pot; mix well before serving.
