  • 2 pounds baby potatoes (Yukon Gold or Russets)
  • 1/4 cup olive oil (or avocado oil)
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 cup feta cheese (or goat cheese)
  • 2 tablespoons fresh lemon juice & zest
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut baby potatoes into halves or quarters for even cooking.
  3. In a mixing bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Toss the potatoes until well coated.
  4. Spread seasoned potatoes on a baking tray lined with parchment paper and roast for about 35 minutes until crispy and golden brown.
  5. Remove from the oven and crumble feta over the hot potatoes. Drizzle with lemon juice and sprinkle lemon zest on top.
  6. Garnish with fresh parsley before serving warm.
