  • 1 pound lean ground beef
  • 1 medium onion (chopped)
  • 1 cup frozen corn (thawed)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 12 yellow corn tortillas
  • 2 cans (15 ounces each) chopped tomatoes (drained)
  • 8 green chile peppers (roasted and chopped)
  • 1 cup sour cream
  • 1 cup Pepper Jack cheese (shredded)

Instructions

  1. In a large fry pan over medium heat, brown the ground beef until it's no longer pink. Add the chopped onions and cook for an additional 5 minutes until soft.
  2. Stir in the thawed corn, black beans, drained tomatoes, chopped chiles, taco seasoning, and half a cup of water. Let it simmer for about 10 minutes.
  3. Preheat your oven to 350°F (175°C) and spray a 9 x 13 baking dish with cooking spray.
  4. Layer one cup of the meat mixture at the bottom of the dish. Top with half of the corn tortillas, overlapping them slightly.
  5. Spoon half of the remaining meat mixture over tortillas, add sour cream evenly on top, then layer with more tortillas followed by the rest of the meat mixture. Finish with shredded cheese.
  6. Bake for approximately 25 minutes until bubbly and golden brown. Allow to rest for 5 minutes before garnishing with sliced jalapenos, chopped tomatoes, and cilantro.
