  • 12 ounces short pasta (rotini, penne, farfalle)
  • 2 (5-ounce) cans solid white tuna (in water)
  • 1/2 cup diced onions
  • 1 pint grape tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1 cup diced cucumber
  • 3 tablespoons capers
  • 3 tablespoons freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons plain yogurt

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together olive oil, lemon juice, yogurt, Dijon mustard, garlic powder, salt, and black pepper.
  3. In a large bowl, combine cooked pasta with drained tuna, onions, tomatoes, olives, cucumber, and capers. Pour the dressing over the top.
  4. Toss gently until evenly coated. Garnish with chopped parsley before serving.
