2 sandwich rolls, ciabatta buns, or English muffins
4 large eggs
2 tablespoons milk
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup crumbled feta cheese
1 small tomato, sliced
1/2 small cucumber, thinly sliced
2 tablespoons sliced black olives
1 handful baby spinach or arugula
2 tablespoons hummus or Greek yogurt spread

Instructions

  • In a small bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.
  • Heat olive oil in a nonstick skillet over medium heat.
  • Pour the egg mixture into the skillet and cook gently, stirring occasionally, until soft scrambled eggs form.
  • Lightly toast the sandwich rolls or English muffins.
  • Spread hummus or Greek yogurt evenly on the inside of each roll.
  • Layer the spinach or arugula on the bottom half of each sandwich.
  • Add the scrambled eggs, then top with feta cheese, tomato slices, cucumber slices, and black olives.
