1 Tablespoon unsalted butter
10 ounces Breakfast Sausage (Preferably Maple flavored)
1/4 Cup Sweet Onion (fine chopped)
2 Cups All-purpose flour
2 1/2 teaspoons Baking powder
1/2 teaspoon Salt
1 1/2 Cups Milk (Drizzle in more milk if batter needs thinned)
1 large Egg (lightly beaten)
Butter and pure maple syrup for serving
Instructions
In a non-stick fry pan, cook crumbled breakfast sausage over medium heat until no longer pink. Add finely chopped onions and cook until tender.
In a mixing bowl, combine flour, baking powder, and salt. In another bowl, mix beaten egg with milk.
Pour the milk mixture into the dry ingredients and stir until just combined. Gently fold in the cooked sausage and onions.
Preheat your non-stick fry pan with a light spray of avocado oil. Pour 1/4 cup of batter onto the pan; cook until bubbles form on top, then flip and cook until golden brown.
Keep pancakes warm while cooking additional batches.
