  • 1 lb rotini pasta
  • 16 oz Italian salad dressing
  • 8 oz mozzarella cheese
  • 1 cup diced chicken
  • 1/2 cup mini turkey turkey pepperoni
  • 1/2 cup sliced olives
  • 1 cup halved grape tomatoes
  • 1/4 cup chopped flat-leaf parsley
  • Salt & pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and set aside to cool.
  2. In a large mixing bowl, combine cooked pasta, half of the Italian dressing, mozzarella cheese, chicken, turkey turkey pepperoni, olives, grape tomatoes, and parsley. Mix gently until evenly coated.
  3. Cover and refrigerate for at least one hour to allow flavors to meld.
  4. Before serving, stir in the remaining Italian dressing and adjust seasoning with salt and pepper as needed.
