  • 1/4 cup + 2 teaspoons powdered sugar
  • Zest of 2 lemons
  • 4 teaspoons lemon juice
  • 2 teaspoons vanilla
  • 1 1/4 cups flour
  • 4 teaspoons cornstarch
  • 1/4 teaspoon fine sea salt
  • 1/2 cup powdered sugar for rolling

Instructions

  1. In a mixing bowl, beat together softened unsalted butter and powdered sugar until well combined. Add lemon zest, lemon juice, and vanilla extract; mix until smooth.
  2. Gradually add flour, cornstarch, and salt to the mixture. Blend on low speed until just combined; the dough should be slightly crumbly but hold together when pressed.
  3. Divide the dough in half and shape into logs about 12 inches long using parchment paper. Refrigerate for 1 hour.
  4. Preheat your oven to 350°F (175°C). Slice each log into 12 even pieces and place on a lined baking sheet.
  5. Bake for 12-14 minutes until edges are barely golden and cookies feel dry to the touch.
  6. Remove from the oven and cool slightly before rolling in powdered sugar.
