  • 1/2 cup coconut milk
  • 1 cup confectioners' sugar
  • 1 and 1/2 tablespoons key lime juice
  • 1 teaspoon lime zest
  • 1/8 teaspoon salt
  • 1/2 cup shredded coconut, toasted
  • 2 teaspoons lime zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, combine sugar, lime zest, melted coconut oil, egg, and coconut milk until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Spoon batter into a donut pan, filling each cavity halfway.
  6. Bake for about 10 minutes or until a toothpick comes out clean.
  7. While cooling, prepare the glaze by mixing confectioners' sugar, key lime juice, lime zest, and salt until smooth.
  8. Dip each cooled donut into the glaze and sprinkle with toasted shredded coconut.
