Ingredients

  • 1 1/4 cup sliced strawberries
  • 1 1/4 cup coconut cream
  • 1/3 cup freshly squeezed lemon juice (about 1 1/2 lemons)
  • 1/3 cup powdered Swerve Sweetener

Instructions

  1. Blend all ingredients in a blender until smooth; adjust sweetness if desired.
  2. Pour the mixture into popsicle molds, filling each about 3 ounces.
  3. Insert wooden sticks two-thirds into each mold; freeze for one hour if needed to support sticks.
  4. Freeze for at least 6 to 8 hours until solid.
  5. To unmold, run warm water over the outside of the molds for 5–10 seconds and gently pull on the sticks.
