  • 3 cups fresh raspberries
  • 1 teaspoon xanthan gum or 2 teaspoons arrowroot powder
  • 1/3 cup + 1/4 cup sugar-free sweetener, divided
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/4 cup golden monk fruit
  • 1/4 cup walnuts, chopped
  • 1/4 cup pecans, chopped
  • 2 tablespoons hemp hearts
  • Pinch of salt
  • 3/4 cup unsalted butter, cold & cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix raspberries, xanthan gum or arrowroot powder, 1/3 cup sweetener, and vanilla extract. Set aside.
  3. In a food processor, combine almond flour, remaining sweetener, walnuts, pecans, hemp hearts, and salt. Add cold butter and pulse until crumbly.
  4. Spread raspberry mixture in a square baking dish and top with crumble mixture evenly.
  5. Bake for about 20 to 25 minutes until golden brown. Allow to cool slightly before serving.
