  • 3 large eggs
  • 1 egg yolk
  • 1 cup macadamia nut milk (or nut milk of choice)
  • 1/2 cup heavy whipping cream
  • 1/2 cup powdered erythritol
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Pour sugar-free caramel syrup into a loaf pan and tilt to coat the bottom evenly.
  3. In a blender, combine eggs, egg yolk, macadamia nut milk, heavy cream, powdered erythritol, lemon zest, and vanilla; blend until smooth.
  4. Pour the custard mixture over the caramel base in the loaf pan.
  5. Place the filled pan into a larger baking dish; add hot water halfway up the sides.
  6. Bake for 60 to 75 minutes until set but slightly jiggly in the center.
  7. Cool on a rack for about 30 minutes, then refrigerate for at least 8 hours before unmolding.
