  • 3 jalapenos (stems removed and seeded)
  • 1 packet dry ranch dressing mix
  • 1 cup mayonnaise
  • 1 cup milk
  • 1 lb fusilli/rotini pasta
  • 1 can black beans (15 oz, rinsed and drained)
  • 1 cucumber (peeled and chopped)
  • 1 red pepper (seeded and diced)
  • 3 plum tomatoes (chopped)
  • 1 cup corn
  • 6 green onions (chopped)
  • juice from 1 lime

Instructions

  1. Prepare the Dressing: In a food processor, blend milk, mayonnaise, ranch seasoning, and jalapenos until smooth. Refrigerate for at least 20 minutes.
  2. Cook the Pasta: Boil pasta according to package directions; add black beans during the last minute of cooking. Drain and rinse with cold water.
  3. Combine Vegetables: In a large bowl, mix cucumbers, red pepper, tomatoes, and corn. Gently fold in the cooked pasta and black beans.
  4. Add Cheese & Seasonings: Mix in cheese, green onions, salt, and pepper until combined.
  5. Mix in Dressing & Chill: Fold in the refrigerated dressing until evenly coated. Refrigerate for at least one hour before serving.
