  • 2 pounds boneless, skinless chicken breasts
  • 4 yellow peaches
  • 3 medium jalapeno peppers
  • ½ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ⅛ teaspoon red pepper flakes
  • 15 wooden skewers, (soaked in water for 30 minutes)

Instructions

  1. Soak wooden skewers in water for 30 minutes.
  2. In a mixing bowl, marinate cubed chicken with kosher salt, black pepper, chili powder, and olive oil for 10 minutes.
  3. Thread marinated chicken onto skewers, alternating with peach quarters and jalapeno chunks.
  4. Prepare the glaze by combining peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes in a bowl.
  5. Preheat air fryer to 400°F (200°C). Cook skewers for about 11 minutes or until chicken is cooked through and slightly charred; brush with glaze halfway through cooking.
