  • 1/4 cup (60 ml) milk
  • 1 small onion, finely grated (about 75 g)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup (15 g) fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup (180 g) rice or quinoa
  • 2 cups (480 ml) water or vegetable broth
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (120 g) cucumber, diced
  • 1/2 cup (75 g) red onion, sliced
  • 1/4 cup (40 g) olives, sliced
  • 1 cup (240 g) plain Greek-style yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, grated
  • 1 tablespoon fresh dill or parsley
  • 1/4 teaspoon salt

Instructions

  1. Soak breadcrumbs in milk for 2 minutes.
  2. In a mixing bowl, combine meatball ingredients without overmixing.
  3. Shape into 1 ½-inch meatballs.
  4. In a frying pan, heat olive oil over medium heat and cook meatballs for 10–12 minutes until browned.
