  • 2¾ cups all-purpose flour

  • ⅔ cup milk
  • 2 tbsp melted butter
  • Cornmeal (to prevent sticking on the cookie sheet after the second rise)

Instructions

  1. In a large mixing bowl, combine warm water, yeast, and sugar. Let sit for 3-4 minutes until foamy.
  2. Gradually add flour and salt alternately with milk until just mixed.
  3. Incorporate melted butter carefully without overheating the yeast.
  4. Mix until no dry flour remains; avoid overworking the dough.
  5. Cover with plastic wrap and let rise in a warm place for 60-90 minutes until doubled in size.
  6. Roll out dough on a floured surface to about ½ inch thick.
  7. Cut out circles using a round cutter (approximately eight muffins).
  8. Place on a cornmeal-dusted cookie sheet; cover and let rise again for about 45 minutes.
  9. Heat a non-stick pan over medium heat; cook muffins for about 5 minutes on each side until golden brown.
