  • 1/4 cup fresh lime juice (about 2 large limes)
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika

Instructions

  1. Place the chicken breasts in a zip-top bag, seal it tightly, and pound to an even thickness of 1/2" – 3/4". Season with salt and pepper.
  2. In a mixing bowl, whisk together lime juice, olive oil, garlic powder, cumin, and smoked paprika. Pour over the chicken in the bag and massage to ensure even coating.
  3. Refrigerate for at least 2 hours or overnight for enhanced flavor. Remove from the fridge 1-2 hours before grilling to bring to room temperature.
  4. Preheat your grill to medium heat. Grill chicken for about 6-8 minutes on one side until grill marks form, then flip and cook another 6-8 minutes until internal temperature reaches 165°F.
  5. Remove from heat and let rest covered with foil for 5-10 minutes before serving.
