  • 2 tablespoons sweet chili sauce
  • 1 tablespoon apple cider vinegar
  • 4 cloves garlic
  • 1 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 1/2 cup extra-virgin olive oil
  • Juice and zest of 1 lemon
  • 1 jalapeno (deseeded)

Instructions

  1. Prepare the chimichurri by blending garlic, parsley, cilantro, olive oil, lemon juice, lemon zest, jalapeno, Italian seasoning, red pepper flakes, and salt in a food processor until smooth but textured. Refrigerate.
  2. In a medium bowl, combine barbecue sauce, sweet chili sauce, brown sugar, and apple cider vinegar.
  3. Preheat your grill to medium heat and lightly oil the grates.
  4. Season chicken with salt and pepper. Coat generously with the barbecue sauce mixture.
  5. Grill chicken for about 5-6 minutes per side or until it reaches an internal temperature of 155°F.
  6. Let the chicken rest covered with foil for five minutes before serving topped with chimichurri.
