  • 6 baking potatoes, cubed
  • 1 white onion, diced
  • 3 tbsp butter, sliced
  • 1 tbsp olive oil
  • 6 garlic cloves, minced
  • 1 tsp parsley
  • salt and pepper to taste
  • 1 cup cheddar cheese, shredded
  • 1/2 cup parmesan cheese, shredded

Instructions

  1. Preheat your grill on high heat.
  2. In a mixing bowl, combine cubed potatoes, diced onion, sliced butter, olive oil, minced garlic, parsley, salt, and pepper. Toss until well mixed.
  3. Spray a large piece of aluminum foil with cooking spray and place the potato mixture in the center. Seal the foil tightly to create a packet.
  4. Place the packet on the preheated grill and cook for 10 minutes before flipping it over. Cook for another 10 minutes until the potatoes are tender.
  5. Carefully open the packet (watch out for steam!) and sprinkle both cheeses over the potatoes. Reseal the packet tightly.
  6. Cook for an additional 5 minutes or until the cheese has melted.
  7. Remove from grill carefully and serve hot.
