  • ¼ cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 cup plain Greek yogurt
  • 1 small cucumber, grated and excess moisture squeezed out
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs, egg, minced garlic, oregano, thyme, salt, pepper, and parsley.
  3. Shape into meatballs about 1 inch in diameter and place on a parchment-lined baking sheet. Drizzle with olive oil.
  4. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  5. For tzatziki, mix Greek yogurt, grated cucumber (drained), minced garlic, olive oil, lemon juice, dill, salt, and pepper in a separate bowl. Refrigerate for at least 15 minutes before serving.
