  • 1 lemon (juiced)
  • 2 cups plain Greek yogurt
  • 1/2 cucumber (peeled)
  • 3 cups all-purpose flour
  • Olive oil
  • Fresh spinach
  • Garlic
  • 1 tsp oregano
  • 1/2 tsp salt
  • 2 tbsp olive oil for marinade
  • 1 tsp sea salt for tzatziki
  • 3 cloves garlic (peeled and mashed into a paste)
  • 1 tbsp apple vinegar
  • 1 tbsp fresh dill (minced)
  • 1 cup warm water (about 110 degrees)
  • 3 tbsp extra-virgin olive oil (plus more for bowl)
  • 2 tsp coarse salt
  • Oil to brush on the dough before cooking
  • 1 large onion (sliced)
  • 1/2 onion (sautéed)
  • 1 flatbread
  • 150 g baby spinach (sautéed)
  • 1/2 cup tzatziki sauce
  • 1 head roasted garlic
  • 2 tbsp olive oil (to drizzle after cooking)

Instructions

  1. Marinate the chicken: Combine lemon juice, minced garlic, oregano, olive oil, and salt in a mixing bowl. Add chicken and coat well; let marinate for at least 30 minutes.
  2. Prepare tzatziki: Grate cucumber and sprinkle with sea salt. After 10 minutes, mix Greek yogurt, mashed garlic, olive oil, apple vinegar, minced dill, and squeezed cucumber.
  3. Make flatbread dough: Mix warm water with yeast; let sit until frothy. In a bowl, combine flour and salt; add yeast mixture and olive oil. Knead until smooth.
  4. Cook chicken: Heat oil in a skillet; cook marinated chicken until fully cooked through.
  5. Sauté onions and spinach; roll out flatbreads and cook until golden.
  6. Assemble: Spread tzatziki on flatbreads; top with sautéed spinach mixture, cooked chicken pieces, feta cheese, and roasted garlic drizzle.
