  • 1 pound jumbo shrimp (peeled and deveined)
  • 2 tablespoons extra-virgin olive oil
  • 1 pint halved cherry tomatoes
  • 6 tablespoons butter
  • 1 tablespoon grated garlic
  • 1 teaspoon crushed red pepper (or to taste)
  • 1 tablespoon fresh lemon juice
  • Fresh parsley for garnish

Instructions

  1. Boil water in a large pot, season with salt, and cook linguine until al dente (about 11 minutes). Reserve ½ cup pasta water before draining.
  2. Pat shrimp dry and season lightly with salt.
  3. In a skillet over medium-high heat, add olive oil. Sauté shrimp until pink (about 2–3 minutes), then remove from skillet.
  4. In the same skillet, add cherry tomatoes, garlic, butter, and crushed red pepper. Stir until butter melts; add reserved pasta water and lemon juice to create a sauce.
  5. Return shrimp to the skillet. Toss with drained pasta and garnish with parsley before serving.
