  • 2½ cups all-purpose flour
  • 2¼ teaspoons baking powder
  • ¼ teaspoon table salt
  • 12 tablespoons unsalted butter (softened)
  • 1¼ cups granulated sugar
  • 8 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • ½ cup rainbow sprinkles
  • 2 cups heavy cream
  • ½ cup confectioners' sugar
  • Fresh blueberries for garnish
  • Fresh raspberries for garnish
  • Pop Rocks for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until fluffy. Mix in egg yolks and vanilla.
  4. Gradually add dry ingredients alternately with milk until just combined. Fold in sprinkles.
  5. Pour batter into liners and bake for 22-25 minutes or until a toothpick comes out clean.
  6. Allow cooling completely before frosting.
  7. Whip heavy cream with confectioners' sugar and vanilla until soft peaks form.
  8. Top each cupcake with whipped cream, fresh berries, and sprinkle with Pop Rocks before serving.
