  • 1/4 teaspoon salt
  • freshly ground black pepper, to taste
  • 1/2 a green apple, grated
  • 1/2 pound ground chicken
  • 2 whole wheat burger buns, split and toasted
  • 1/4 head cabbage, shredded
  • 1/2 green apple, grated
  • 4 tablespoons Mayonnaise
  • 2 tablespoons rice apple vinegar
  • 1/4 teaspoon salt
  • freshly ground black pepper, to taste
  • handful fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine mayonnaise, yellow mustard, dried rosemary, salt, and pepper. Grate half an apple into the mixture and stir.
  2. Add ground chicken and mix gently until combined; avoid overmixing.
  3. Shape the mixture into two patties and grill over low heat for 5-7 minutes on each side until cooked through (165°F internal temperature).
  4. For the slaw, grate the remaining apple and slice cabbage. Whisk together mayonnaise, rice apple vinegar, salt, and pepper in a bowl before adding cabbage, grated apple, and chopped parsley; toss well.
  5. Serve each burger on toasted buns topped with slaw.
