For the Chicken:
4 boneless, skin-on chicken breasts
2 tablespoons achiote paste
3 tablespoons orange juice
2 tablespoons lime juice
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper

For Serving:
Fresh cilantro
Lime wedges
Roasted vegetables or rice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, whisk together the achiote paste, orange juice, lime juice, garlic, smoked paprika, cumin, oregano, chili powder, olive oil, salt, and black pepper.
  3. Place the chicken breasts in a large dish or resealable bag and pour the marinade over them.
  4. Coat the chicken evenly and marinate for at least 1 hour, or overnight for deeper flavor.
  5. Arrange the chicken breasts skin-side up on a baking sheet or roasting pan.
  6. Roast for 30 to 35 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  7. For extra crispiness, broil the chicken for 2 to 3 minutes at the end of cooking.
  8. Let the chicken rest for 5 minutes before serving.
  9. Garnish with fresh cilantro and lime wedges. Serve with roasted vegetables, rice, or salad.
