  • 1 pound short spiral pasta (Rotini, Fusilli, or Cavatappi)
  • 2 large stalks celery, finely diced
  • ½ medium red onion, finely diced
  • 2 medium carrots, shredded
  • ½ cup golden raisins
  • ½ cup fresh cilantro, chopped
  • 1 cup mayonnaise
  • 1 cup plain Greek yogurt
  • 2 to 3 tablespoons curry powder
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse with cold water.
  2. While pasta cooks, prepare vegetables: dice celery and red onion, shred carrots, and chop cilantro.
  3. Soak raisins in hot water for 10 minutes; drain well.
  4. In a mixing bowl, whisk together mayonnaise, Greek yogurt, curry powder, lemon juice, honey (or maple syrup), turmeric, salt, and black pepper until smooth.
  5. Fold cooled pasta into the dressing along with prepared vegetables and plumped raisins until evenly coated.
  6. Refrigerate for at least 2 hours before serving; stir again before serving.
