  • 10 ounces cherry tomatoes

  • 1 can yellow corn
  • 1 can white corn
  • 1 can black beans
  • 1 can black-eyed peas
  • 1 medium jalapeno pepper
  • 3 bell peppers (red, orange, yellow)
  • 1 cup Italian vinaigrette
  • Salt to taste

Instructions

  1. Cook the rotini pasta al dente according to package instructions. Drain and let it cool.
  2. In a large mixing bowl, combine the cooled pasta, turkey pepperoni, chopped cherry tomatoes, red onion, yellow corn, white corn, black beans, black-eyed peas, jalapeno pepper, and diced bell peppers.
  3. Pour the Italian vinaigrette over the mixture and toss until everything is well coated. Start with less dressing; you can add more if needed.
  4. Adjust seasoning by adding salt to taste.
