  • 1 pound baby potatoes
  • 5 ears of corn (cut into rounds)
  • 1 ring (13.9 ounces) chicken or turkey kielbasa (cut into rounds)
  • 1-2 medium zucchini (cut into rounds)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • 1 recipe cowboy butter
  • 11 wooden skewers (soaked in water for 30 minutes, or metal skewers)

Instructions

  1. Boil baby potatoes and corn in salted water for 6-7 minutes until fork-tender. Drain and cool in ice water.
  2. In a large bowl, mix cooled potatoes, corn, kielbasa, and zucchini with olive oil and seasonings.
  3. Thread the mixture onto soaked skewers, alternating ingredients.
  4. Preheat the grill to medium-high heat. Grill skewers for about 10-12 minutes, turning occasionally.
  5. Brush warm cowboy butter over skewers before serving.
