  • 1 large Egg (or flax egg for vegan)
  • 1 large Egg yolk
  • 1/4 cup Unsalted butter (melted, or dairy-free alternative)
  • 4 cups All-purpose flour (or gluten-free mix)
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • a few drops Blue gel food coloring (or alternatives like butterfly pea powder)
  • 1/4 cup Unsalted butter (softened)
  • 1/2 cup Brown sugar
  • 2 tablespoons Ground cinnamon
  • 1 cup Crushed chocolate sandwich cookies
  • 1/2 cup Mini chocolate chips
  • 4 ounces Cream cheese (softened, or non-dairy cream cheese)
  • 1/4 cup Unsalted butter
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Crushed chocolate cookies
  • to taste Extra mini chocolate chips (optional)

Instructions

  1. In a mixing bowl, combine warm milk and yeast; let sit until frothy.
  2. Mix in sugar, eggs (or flax egg), melted butter, flour, salt, vanilla extract, and blue food coloring until combined. Knead the dough on a floured surface for about 5 minutes.
  3. Let the dough rise in an oiled bowl covered with a damp cloth for about 60 minutes.
  4. Prepare the filling by mixing softened butter with brown sugar, cinnamon, crushed cookies, and mini chocolate chips.
  5. Roll out the dough into a rectangle and spread the filling evenly over it.
  6. Roll into a log shape, slice into 12 pieces, and place in a greased baking dish. Let them rise for another 30 minutes.
  7. Preheat oven to 350°F (175°C) and bake rolls for about 25 minutes until golden brown.
  8. While baking, prepare frosting by beating cream cheese and softened butter; gradually add powdered sugar and vanilla extract until fluffy.
  9. Frost rolls once they cool slightly; enjoy!
