Ingredients

Scale
  • 1/2 cup unsalted butter (1 stick, melted)
  • 1 large egg
  • 1 cup light brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 2 to 3 teaspoons cinnamon
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 6 ounces cream cheese (softened)
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • cinnamon (for garnishing)

Instructions

  1. Preheat your oven to 350°F and prepare an 8-by-8-inch baking pan by lining it with aluminum foil and spraying lightly with cooking spray.
  2. In a large microwave-safe bowl, melt the butter in the microwave. Allow it to cool slightly before whisking in the egg, brown sugar, vanilla extract, and cinnamon until smooth.
  3. Fold in the flour and salt gently until just combined.
  4. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 20 to 24 minutes until set in the center.
  5. Let the bars cool completely on a wire rack before frosting.
  6. For the frosting, beat together softened cream cheese, softened butter, confectioners’ sugar, vanilla extract, and salt until light and fluffy.
  7. Spread the frosting over cooled bars and garnish with cinnamon before slicing into squares.
