  • 2 Tbsp lemon juice
  • 5 cloves garlic
  • 1 Tbsp smoked paprika
  • 1 cup plain Greek yogurt (for tzatziki)
  • 2 Persian cucumbers
  • Fresh dill
  • White rice (for serving)
  • Sliced cherry tomatoes
  • Sliced avocado

Instructions

  1. Marinate the chicken by mixing Greek yogurt, minced garlic (3 cloves), lemon juice, olive oil, smoked paprika, oregano, cumin, black pepper, salt, and optional red pepper flakes in a bowl. Coat the chicken thoroughly and refrigerate for at least 30 minutes.
  2. Prepare the tzatziki by combining Greek yogurt with grated cucumber, minced garlic (2 cloves), dill, and salt in another bowl. Mix well and adjust seasoning as needed.
  3. Cook the marinated chicken in a hot skillet over medium-high heat for about 5-7 minutes on each side until golden brown and cooked through.
  4. Assemble your bowl with warm rice at the base, followed by the cooked chicken thighs, dollops of tzatziki sauce, sliced cucumbers, cherry tomatoes, and avocado.
