  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken ham
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound each chicken breast to about ¼ inch thickness. Layer each with a slice of chicken ham and Swiss cheese, then roll tightly and secure with toothpicks.
  3. In a bowl, combine flour with salt and pepper. Dredge each roll in flour, dip in beaten eggs, and coat with breadcrumbs.
  4. Heat olive oil and butter in a skillet over medium heat. Sear the rolls for about 2–3 minutes on each side until golden brown.
  5. Transfer to a baking dish and bake uncovered for approximately 20–25 minutes until the internal temperature reaches 165°F (74°C).
  6. For the sauce, melt butter in a saucepan over medium heat. Add flour; cook for one minute before gradually whisking in milk. Stir in Dijon mustard and Parmesan cheese; simmer until thickened.
  7. Remove toothpicks from the rolls, slice into rounds, drizzle with sauce, and serve.
