  • 1 crisp tart apple (Granny Smith or Pink Lady)
  • 1/4 cup sliced almonds
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped curly leaf parsley
  • 1/4 cup lemon juice (from about lemons)
  • 1/4 cup minced shallot
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Slice the celery into thin pieces and place in a large salad bowl.
  2. Cut the apple into matchstick slices (unpeeled) and add to the bowl.
  3. Toast sliced almonds and pistachios in a dry skillet over medium heat for about 5 minutes; set aside to cool.
  4. Add chopped parsley to the bowl; toss gently.
  5. Combine lemon juice, minced shallot, honey, and Dijon mustard in a jar; shake well.
  6. Add olive oil to the dressing mixture; shake again until emulsified; season with salt and pepper.
