  • 1 – 1½ pounds skirt steak
  • ⅓ cup extra virgin olive oil
  • ⅓ cup soy sauce
  • ⅓ cup fresh lime juice
  • 3 tablespoons fresh orange juice
  • 3 tablespoons white vinegar
  • 3 tablespoons granulated sugar
  • ¼ cup fresh cilantro, chopped
  • ½ medium onion, diced
  • 4 garlic cloves, minced
  • 1 jalapeño pepper, seeded and minced
  • Salt and pepper to taste

Instructions

  1. In a large Ziploc bag, whisk together olive oil, soy sauce, lime juice, orange juice, vinegar, sugar, cilantro, onion, garlic, jalapeño pepper, and black pepper until well combined.
  2. Add the skirt steak to the marinade. Seal the bag tightly and massage gently to ensure even coating. Refrigerate for at least 8 hours or overnight.
  3. Preheat your grill over medium-high heat.
  4. Remove the steak from the marinade and let excess drip off. Season both sides with salt and pepper.
  5. Grill the steak for about 6-7 minutes on each side until golden brown and charred.
  6. Check doneness with an instant-read thermometer aiming for an internal temperature of 145°F.
  7. Allow the steak to rest for 5 minutes before slicing against the grain.
