  • ½ cup soy sauce
  • ¼ cup hoisin sauce
  • ¼ cup fruit juice (as an alcohol substitute)
  • 3 tbsp brown sugar
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • Optional: chili flakes or Sriracha
  • 1 small onion, sliced
  • 23 green onions, cut into 2-inch pieces
  • 1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)

Instructions

  1. Prep the Ribs: Trim excess fat from the short ribs and pat them dry. Season with salt and pepper.
  2. Sear: Heat a skillet over medium-high heat and brown the ribs on all sides until golden.
  3. Prepare Marinade: In a mixing bowl, combine soy sauce, hoisin sauce, fruit juice, brown sugar, garlic, ginger, and optional chili flakes. Mix until sugar dissolves.
  4. Roast: Place seared ribs in a Dutch oven or roasting pan; pour marinade over them along with onion slices. Cover tightly and roast at 275–300°F for 3–4 hours.
  5. Reduce Glaze: Remove ribs; simmer braising liquid in a skillet until thickened.
