  • 2 cups plus 2 tablespoons all-purpose flour
  • 2 cups fresh or frozen blueberries
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing and flouring it or lining it with parchment paper.
  2. Rinse fresh blueberries under cold water and dry; if using frozen blueberries, toss them directly with 1 tablespoon of flour.
  3. In a large bowl, cream together softened butter, cream cheese, and sugar until light and fluffy. Add eggs one at a time and mix in vanilla extract.
  4. In another bowl, whisk together remaining flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until just combined; do not overmix.
  5. Carefully fold in the coated blueberries before pouring the batter into the prepared loaf pan.
  6. Bake for approximately 55-70 minutes until a skewer inserted into the center comes out clean. Allow cooling in the pan before transferring to a wire rack.
